Here is an example of an easy, healthy, dinner or meal I prep for a weeknight: Salsa Chicken
Place chicken breasts in crockpot. Drizzle olive oil and add a cup of water. Pour in the jar of salsa over the chicken breasts. Cool on low for 5.5 hours. Remove chicken and shred. Add to corn tortillas with salsa or over jasmine rice (these are healthier options) and serve!
